Mixed Veg Gravy

Mixed veg gravy is a delicious and nutritious dish that can be enjoyed with rice, roti, or naan. It is made with a variety of vegetables cooked in a rich and creamy gravy flavored with spices. Here are the steps to make mixed veg gravy:
- Wash and chop the vegetables of your choice. You can use carrots, peas, beans, cauliflower, potatoes, or any other seasonal vegetables.
- Heat some oil in a large skillet over medium-high heat and add cumin seeds, bay leaf, cardamom, cloves, and cinnamon. Fry for a few seconds until fragrant.
- Add chopped onion, ginger, garlic, and green chilies and sauté until golden brown.
- Add tomato puree, salt, turmeric, red chili powder, coriander powder, and garam masala and cook until the oil separates from the masala.
- Add some water and bring the gravy to a boil. Then lower the heat and simmer for 10 minutes.
- Add the chopped vegetables and mix well. Cover the skillet with a lid and cook until the vegetables are tender but not mushy.
- Add some fresh cream or cashew paste and stir well. Adjust the seasoning as per your taste.
- Garnish with some chopped coriander leaves and serve hot with rice, roti, or naan.
